  1. Se dejan los garbanzos en agua la noche anterior. Al día siguiente se escogen y se echan a la olla rápida.
  2. Se pone a hervir agua, media olla aproximadamente y se añaden los tocinos, el pollo, la ternera y las verduras peladas y enteras.
  3. Se va despumando con un cacito para sacar las impurezas y cuando esté limpio se cierra la olla en el 2, y cuando empiece a salir el vapor se deja 20-25 minutos.
  4. Al abrir, añadir agua hasta llenar la olla, que esté caliente, si no se encallan los garbanzos y dejar unos 10 minutos más.
  5. Sacar y colar el caldo. Guardarlo para tomarlo en otra ocasión, solo o con fideos o arroz o tipo sopa de las viejas (con rebanadas de pan duro cortadas muy finitas y huevo escalfado) también se puede añadir picatostes y hierbabuena.
  6. Sacar las verduras y apartarlas para hacer puré o ponerlas de acompañamiento. Para hacer el puré añadir un poco de caldito.
  7. Sacar las carnes y el tocino fresco y apartarlo para comerlo después, lo que llamamos en mi tierra la pringá. También se pueden hacer croquetas o añadir la carne picadita al caldo
  8. A lo que queda en la olla se le puede añadir la berza o fideos o arroz, lo que se prefiera. También se añade la morcilla para que cueza un poco.
  9. Si no tengo morcilla, me gusta añadirle un poco de pimentón. Ir probando de sal e ir añadiendo un poco de agua.
  10. A veces aparto un puñadito de garbanzos para echárselos a las espinacas o aliñarlos. Salen un montón de comidas de este puchero!! Sanas y ricas!!
