  9. 1 aguacate
  10. Sal, pimienta y aceite de oliva

    Picamos todas las verduras de tamaño bocado, puerro en rodajas y calabaza en trocitos más finos porque es más dura de cocinar. Laminamos champiñones. Reservamos el aguacate para el final.
  2. Empezamos con el sofrito. Chorrito generoso de aceite de oliva en sartén grande antiadherente y lo primero es la cebolla y puerro y los cocinamos a fuego bajo durante 5-8 min hasta que esté casi transparente la cebolla pero sin tostar el puerro. Después echamos los pimientos. Cocinamos de 6-8 min.
  3. Ahora le toca el turno a calabaza y calabacín. Cocinamos unos 10-12 min. En todo el proceso de cocinar las verduras, movemos de vez en cuando meneando la sartén a ser posible para no desmenuzar mucho la calabaza y el calabacín.
  4. Cuando estén casi cocinados, añadimos los champiñones. Les damos 2 minutos de cocinado y removemos. Salpimentamos y terminamos de cocinarlos. Unos 5 min deberían bastar.
  5. Ahora añadimos el pollo ya cocinado, un par de vueltas, 2 minutos de cocinado.
  6. Batimos los huevos, ponemos sal al gusto, ponemos el fuego fuerte y con una espátula de silicona para evitar que se pegue, partimos, troceamos y cocinamos. Reservar
  7. Abrimos el aguacate y troceamos. Servimos el revuelto y añadimos el aguacate.
  8. Servir y disfrutar 😋
