  1. Ponemos agua en una olla y cuando hierva añadimos la calabaza. Dejamos hirviendo unos 5 minutos (hasta que se ablande un poco) y la sacamos y ponemos sobre un trapo a que se airee.
  2. Batimos 2 huevos en un plato hondo y añadimos sal, pimienta negra, orégano y albahaca (al gusto). En otro plato añadimos el pan rallado y tenemos la bandeja del horno al lado para ir poniendo los san jacobos.

  4. Escogemos el queso que más nos guste (yo usé mozzarella y queso de tetilla) y lo cortamos en finas lonchas y de forma que cuadre dentro de las dos rodajas de calabaza. Después, con cuidado, lo mojamos bien en el huevo y agarrándolo bien lo empanamos (es muy escurridizo por lo que hay que tener paciencia).
  5. Una vez empanado, llevamos al huevo otra vez el san jacobo y mojamos los bordes, volvemos a empanar para que se sellen bien y una vez más el san jacobo entero al huevo y al pan rallado. Así nos aseguramos de que quede bien sellado y bien crujiente. Si se nos acaba el huevo o el pan rallado añadimos más.
  6. Los colocamos todos sobre la bandeja del horno previamente pincelada con aceite y lo precalentamos a 180 grados. Nota: hay que estar pendiente, a mi se me doró primero la parte de debajo por el aceite y luego le fuí dando la vuelta para que se quedase un color homogéneo. Acompañar de la salsa que más nos guste y a disfrutar!
