  2. Poner una sartén de asas o paellera con un chorreón de aceite al fuego, poner la guindilla, sofreír un poco y sacar. Echar el bogavante troceado (se trocea la cola y la cabeza por la mitad, las pinzas enteras), se sofríe hasta que coja el color rojizo y se saca.
  3. Añadir los ajos, el pimiento rojo y calamar, cuando esté un poco dorado se echa el tomate rallado (puede ser 2 cucharadas de tomate frito). Y por último un poquito de pimentón, la ñora molida y el azafrán.
  4. Añadir el arroz en seco para que coja todos los sabores del sofríto y mover unos segundos (cuidado que no se queme). Poner el 1,5 l del caldo bien caliente y previamente colado en un chino. Cuando lleve cociendo a fuego fuerte 10min poner la gamba pelada y el bogavante por encima.
  5. Bajar el fuego y dejar otros 10 minutos, hasta que el arroz esté a nuestro gusto. Sacar y dejar reposar unos minutos antes de servir.
